The Potential for Healthier and Energy Efficient American Diets

Abstract: Optimization modeling was used to create two hypothetical healthy diets, one that minimizes changes from the current American diet and another that minimizes energy use. Both healthy diets reduce energy use in the U.S. food system, include animal-based foods, and maintain or reduce household food expenses.
