Abstract:
The aim of the study was to identify opportunities and to demonstrate the viability of the organization of small wild game processing facilities as alternative employment for the local market and the possibility of spread of venison consumption through increased availability and lower prices of products. Despite such large values of health, the average Pole eats in a year, only 0.08 kg wild game meat. It is caused primarily poor availability of products and their high price. To remove these barriers, one should consider the possibility of alternative methods of production. One possibility is the production of wild game meat within the marginal, localized and restricted activity. Such food-processing plants occupy the low area can be run by very hunters or hunters’ associations. Economic analysis showed high profitability of such investments.
