Konsumencka ocena rynku żywności ekologicznej na przykładzie Krakowa

Abstract: The aim of the study was an attempt of indirect and direct evaluation of the organic food market made on the basis of the preferences and opinions of consumers. Indirect assessment refers to the purchase of individual organic food groups by consumers. In turn, direct assessment concerned their opinion about the attractiveness of assortment of organic food available on the market. Studies were conducted in 2015 using PAPI method in stores offering organic food in the city of Kraków. The study included 318 respondents. The results allowed to identify groups of organic products which are the most frequently chosen by the consumer in stores across the city of Kraków. These products are vegetables, fruit and bread. The evaluation of attractiveness of the assortment of individual organic food groups available on the market gave very similar results. The least attractive in consumer opinion looks market offer of ecological meat and its products.
