Abstract: The article attempts to present the basic information about the state and prospects of the effectiveness of enterprising actions in rural areas with regard to the unconventional, traditional and regional food, especially in Poland. It describes the past and future potential dangers resulting from the initial phase of creation of this niche food market. / Synopsis. Artykuł jest próbą przedstawienia podstawowych informacji na temat stanu i perspektyw rozwoju działań przedsiębiorczych na obszarach wiejskich w zakresie żywności niekonwencjonalnej, tradycyjnej i regionalnej w Polsce. Ponadto jest próbą omówienia dotychczasowych korzyści, jak i potencjalnych zagrożeń wynikających z początkowej fazy tworzenia się niszowego rynku tejże żywności.
