Kultura bezpieczeństwa i jakości żywności – krytyczna analiza istoty i zakresu pojęcia oraz propozycja doprecyzowania

Abstract: The article is a voice in the discussion on the development of the concept of food safety culture (FSC), which is taking place in the scientific community related to the food market, but also among practitioners of economic life. The aim of the article is to identify the differences in the understanding of this concept and to attempt to clarify it. For this reason, the text undertakes an analysis of the existing definitions and the content related to them in legal documents, food standards and norms, and the literature on the subject, as well as a synthesis of the convergences and divergences regarding the understanding of FSC. In turn, the reference to the concept of culture, which is to help clarify FSC, indicates the need for in-depth and integral shaping of the attitudes of producers, as well as the attitudes of consumers, which should be undertaken from the early stages of education. This concept is ultimately linked to the concept of ethos, which is associated with the gradual formation of attitudes in accordance with a specific moral system, taking into account cultural conditions. It also requires paying more attention not only to the issues of safety, but also to the quality of food, which is so relevant today and which was emphasised in the title of the study. / Synopsis. Artykuł jest głosem w dyskusji dotyczącej kształtowania się koncepcji kultury bezpieczeństwa żywności (KBŻ), która toczy się w środowisku naukowym, związanym z rynkiem żywnościowym, ale także wśród praktyków życia gospodarczego. Celem artykułu jest ustalenie różnic w rozumieniu tego pojęcie oraz próba jego doprecyzowania. Z tej racji w tekście podjęta została analiza dotychczasowych określeń i treści z nimi powiązanymi w dokumentach prawnych, standardach i normach żywnościowych oraz literaturze przedmiotu, a także dokonana została synteza zbieżności i rozbieżności dotyczących rozumienia KBŻ. Z kolei, odwołanie do pojęcia kultury, mające pomóc doprecyzować KBŻ, wskazuje na potrzebę dogłębnego i integralnego kształtowania postaw producentów, a także postaw konsumentów, które należy podejmować od wczesnych etapów edukacji. Koncepcja ta zostaje ostatecznie powiązana z pojęciem etosu, które łączy się z cierpliwym formowaniem postaw zgodnie z określonym system moralnym, uwzględniając uwarunkowania kulturowe. Wymaga ona też zwrócenia baczniejszej uwagi nie tylko na kwestie bezpieczeństwa, ale także jakości żywności, tak aktualnej dzisiaj, co podkreślone zostało w tytule opracowania.
