CHICOZAPOTE FRESCO Y CORTADO (Achras Sapota) CON ACTIVIDAD ANTIOXIDANTE; UNA DEMANDA ACTUAL DEL CONSUMO DE FRUTAS

Abstract:
The main objective was develop a product based minimally processed sapodilla using refrigeration and a plastic film for the purpose of maintain quality and retention of compounds with antioxidant activity. A film of low density polyethylene and two refrigeration temperatures was used (2 and 10 ° C), evaluating as response variables content of carotenes, polyphenols, ascorbic acid, total antioxidant capacity, Brix, titratable acidity and useful life. It was concluded that the appropriate temperature for the retention of bioactive compounds was 2 ° C because the sapodilla fractions had higher percentage of free radical scavenging and increased carotene content, obtaining a useful life of approximately 25 days.
