Abstract:
The quality assurance of the cow milk on every stage of milk production and processing is needed and after this manner to contribute to the free competition and to the undisturbed market. In the current Czech statutory provisions the qualitative and hygienic standards are given. These standards allow or exclude the milk from the supplies to the milk production. Within these standards the contractual prices are negotiated, based on the milk qualitative parameters. The long-term observation of these data in month dynamics of the longer time series shows trends of an attention, which is paid to the milk production. The milk realization is utilized not only for higher quality motivation, but also for solving producer's or processor's economical tasks. The development trend of milk production and processing shows the future tendency of milk quality evaluation, especially under influence of developing market.
