Abstract:
Entrepreneurship education in sustainable development (SD) is an essential step in the implementation and development of an SD policy. The assumption is made in this article that it is based on the values of the future entrepreneur, which allow him/her to define and then achieve his/her higher goals in terms of sustainability. The stories of three foodpreneurs illustrate the link between the ideals of sustainability and the aspirations that materialize through the creation of sustainable businesses. The stories also reveal that these ideals arouse a constant desire to overcome the difficulties inherent in social and environmental commitments. Thus, it is on the basis of these findings that we contribute to the creation of a pedagogy that can be integrated into a higher education program in entrepreneurship, aimed at identifying sustainable values and bringing out the aspirations of learners.
