Abstract: The constant improvement of food availability (kcal/person/day), observed in Brazil since the 70s, goes hand in hand with the qualitative degradation of nutrition, due to the eviction of some basic foodstuffs (cereals, legumes and tubers) replaced by sugar and vegetable fats : products closely linked to the export sector. Given these recent changes, a return to a dualistic approach seems particularly relevant, since it helps us to characterize the agricultural dynamic linked to the nutritional transition process.
