Abstract: This article describes sixty years of transformation of the French dairy sector from an institutionalist perspective emphasizing the rules framing the processes of creation and distribution of value added. The co-evolution between technical innovation, public policies and collective structuring is highlighted, as well as their necessary coherence to drive change.
