Abstract:
Fast food development is not any more centered on homogenous world products. Fast food chains are more and more using regional food to attract new markets. After a period where the world system was the engine of fast food diffusion, ethnic and regional food is back. In countries where people are looking for food quality and variety, new identities appear that cultural geography can explain. Classification JEL : F23, L10, L66, R30.
