Abstract: This research analyzes the entrepreneurship linked to the cultivation and consumption of amaranth as a key resource to combat malnutrition and promote food sovereignty. The background highlights the growing global concern about malnutrition and the need for sustainable nutritional sources. The main objective is to assess the efficacy of amaranth as a food and its impact on communities. Using a mixed approach, its nutritional properties were analyzed and consumption surveys were applied. The results confirmed that amaranth, rich in protein, vitamins and minerals, is an essential resource for combating malnutrition and strengthening community food security
