Abstract: The agro-food sector is one of the main areas of Biotechnology, with more than 50% of the potential turnover of bioindustry. But the profit margins of this sector, makes the economy the critical factor for the present application of Biotechnology to it. Important improvements are foreseen throughout the productive plan, of which only a few are a reality, the nineties having a crucial importance in this development. Ethical, legal and consumer problems to be resolved, require balanced development for their attainment.
