Abstract: The agro alimentary sector of Mexico needs to modify its productive structure giving some options for facing the challenges presented in seven important world wide factors that will influence to the XXI century agriculture: Globalization and trade releasing in world markets, population growth, urban aspects, biotechnology, new information an communication technologies, customer's preferences, environment an government politics. Answering these demands, agro-alimentary Mexican sector has tried to install an innovation process which has generated a very important and technological breakthrough between modern agriculture and traditional agriculture. Traditional agriculture is formed by a majority of farmers which are left out and face big economical problems against modern agriculture highly competitive, works with productive, dynamic systems inserted in international markets.
