Abstract: The article studies consumers in the market of students catering on the basis of the method of cluster analysis, which is a many-sided statistical procedure, which envisages collection of data, which keep information about the sampling and ordering objects into relatively homogeneous groups, as a result seven main segments of food consumers are allocated. Using the method of factor analysis the article identifies main factors that influence consumer behaviour when selecting catering establishments. The article studies consumer behaviour in the students catering market in the city of Ivano-Frankivsk using the method of polling and semantic differential. The article identifies main shortcomings in the activity of the studies students catering establishment. The article offers measures for achieving the desired level of satisfaction of clients with the quality of service in the selected catering establishment.
