Trade in Value Chain of Food Products

Abstract: The paper sets out from the definition of the value chain upon which follows the analysis of the value chain structure ih the food sector. Special attention is paid to market forms in the food sector (competition, agreements, oligopolistic constellation and the like). After that, modern form of cooperation in the value chain are started (supply chain management - SCM, efficient consumer response – ECR, and other). In this context the role of wholesale and that of retail trade in the food products value chain are analysed with respect to their market power (concentration level) and their development level in the Republic of Croatia and in the countries of European Union. Concentration level is evaluated with respect to the shares of the largest business entities ih the realized turnover, and the development level is evaluated with respect to the trade capacities – population ratio and with respect to the structure of the operating units according to their main formats.
