The Demand for Beef Specialty Products

Abstract: This article examines the demand for beef specialty products: liver, kidney, heart, tongue, tripe, sweetbreads, and brains. Logit models are used to evaluate the influences of several economic and demographic variables on consumption. The results suggest that consumption of these products is inversely related to income and positively related to household size. Consumption is more likely for older consumers, though the probability of consumption is lower for elderly consumers than for middle-aged consumers. A strong ethnic effect is also revealed.
