Abstract: [eng] Abstract During the Renaissance, Italy and especially Rome provide amazing, sumptuous and exceptional images of gastronomy and arts of eating. Lists, descriptions and preserved accounts also reveal the composition of the daily cockery of the aristocracy ; the courtesy and the ritual which surround the meals ; the setting in which they are served. Thus, Italy has been the birthplace of culinary literature. [fre] Résumé L'Italie, à l'époque de la Renaissance et Rome en particulier, offre des images étonnantes, fastueuses et exceptionnelles de la bonne chère et des arts de la table. Mais aussi, grâce aux listes, aux descriptions, aux comptes conservés, on peut connaître la composition de la cuisine quotidienne de la haute société ; la civilité et les rites qui entourent les repas ; les décors dans lesquels ceux-ci sont servis. Aussi l'Italie a-t-elle été le berceau de la littérature culinaire.
