Abstract: [eng] Abstract During le 18th century, the urban elite's increasing demand for good quality meat gradually contributed to transform the market's organisation. Thus it entailed the appearance of real trade companies in Grenoble. Their development was however hindered by the municipal policy of prices' taxation which Parliament didn't manage to cancel entirely. This marlet's incomplete adaptation to the new born liberalism helped to maintain the town's numerous difficulties concerning its good quality meat's supplies, and partly placed it under the dependence of Lyons's butchers. [fre] Résumé Au XVIIIe siècle, la demande grandissante de viandes de qualité par les élites urbaines contribua à transformer peu à peu l'organisation du marché. Elle favorisa ainsi à Grenoble l'apparition de véritables entreprises marchandes. Leur développement fut cependant entravé par la politique municipale de taxation des prix que ne parvint pas entièrement à supprimer le Parlement. L'incomplète adaptation de ce marché au libéralisme naissant continua à faire planer sur la ville des difficultés nombreuses pour son approvisionnement en viande de qualité, et la plaça en partie dans la dépendance des bouchers de Lyon.
