Abstract: [eng] The supply of beef in the intermediate run. is connected with the price fluctuation, in its turn due to the gap between supply and demand. The result is a «cycle » in the beef production.. The study of this phenomenon enables us do propose an instrument for controlling the cyclic movements. . How efficient and useful is1 this solution ? [fre] L'offre à moyen terme de viande bovine est liée au mouvement des prix, commandé par les écarts entre l'offre et la demande. Un « cycle » dans la production bovine en résulte. . L'étude de ce phénomène permet de proposer un instrument pour maîtriser les mouvements cycliques : 1' « asservissement » de l'offre. . Dans quelle mesure la solution proposée est-elle applicable et efficace ?
