Abstract: [eng] Adaption of Production Structures to Industrial Requirements - The requirements of the processing industry in the pork meat branch as for quality, homogeneity and regularity of supply demand a considerable effort from the farmers in using new techniques and adapting their production structures. However, the productivity gains thus obtained do not necessarily benefit those who have realized them. [fre] Les exigences formulées par les entreprises de transformation de la viande porcine, en matière de qualité, d'homogénéité et de régularité dans l'approvisionnement, nécessitent, de la part des agriculteurs, un effort souvent considérable pour utiliser de nouvelles techniques et adapter leurs structures de production. Il n'est pas évident que les gains de productivité ainsi obtenus profitent à ceux qui les ont réalisés.
