Abstract: [fre] L'étude, sur la période 1968-1975, du secteur des boissons en France, met en évidence une double dynamique : dans un marché globalement en expansion, la dynamique spécifique de chaque groupe de produits est révélatrice des modifications du comportement alimentaire, voire du mode de vie, des consommateurs ; la stratégie des firmes est de s'adapter aux modifications des marchés ou (pour les firmes leaders) de provoquer les évolutions de la demande. D'où une restructuration des entreprises, avec une tendance marquée à l'oligopolisation. [eng] The "drinks" market in France - The study of the drinks sector in France over the period 1968-1975, shows up a two-fold tendency : in a globally expanding market, the development of each group of products brings to light modifications in the eating habits and in the way of life of the consumers. The firm's strategy is to adapt themselves to the modifications of the market or (for the main firms) to encourage changes in demand. Hence a retructurization of the firms, with a tendency towards oligopolization.
