Abstract: [eng] Macroeconomic analysis of food industry since 1945 - Taking into consideration food industry as a full industrial sector, we show that the modifications of its productive apparatus find their roots in the transformation of the central accumulation regime after the war [fre] Considérant les IAA comme un secteur industriel à part entière, nous montrons que les mutations de son appareil productif prennent racine dans les transformations d'ensemble du régime d'accumulation d'après-guerre.
