Urbanisation et consommation alimentaire citadine en Côte d'Ivoire

Abstract: [eng] Since the fifties, Ivory Coast has been characterized by a rapid urbanization : 60 °/o of the population will live in cities around the year 2000. Observing food products consumption by urban people allows to refute the idea of occidentalized alienation. During the last thirthy years, dishes and the budgets structure have few changed, the alimentary habits have not been dramatically modified. On the contrary, the dishes prepared as well as social practices are witnessing to an urban africanity, which is not reducible to an universal stereotype. [fre] Depuis les années 1950, la Côte d'Ivoire est caractérisée par une rapide urbanisation : à l'horizon 2000, 60 % de la population vivront en ville. L'observation des produits alimentaires consommés par les citadins contredit l'idée d'aliénation occidentalisée. Sur les trente dernières années, les mets et la structure des budgets ont peu évolué, les habitudes alimentaires n'ont pas été radicalement modifiées. Au contraire, les plats préparés comme les pratiques sociales témoignent d'une africanité urbaine non réductible à un stéréotype universel.
