L'évolution du comportement alimentaire au Japon

Abstract: [eng] In order to understand the Japanese attitude toward Western food practices, it is useful to study its introduction in Japan from a historical point of view. Some innovations in this field are due to the initiative of the Japanese government or even to the Meiji emperor himself, and have been applied through collective ways like the army and school lunches. In this paper have been quoted examples concerning mainly the meat and milk consumption. [fre] Pour comprendre l'attitude des Japonais à l'égard des pratiques alimentaires occidentales, il est utile d'en connaître le contexte historique. Certaines innovations, dues à des initiatives gouvernementales, voire à la personne même de l'empereur Meiji, ont été appliquées par l'intermédiaire des collectivités comme l'armée et les cantines scolaires. Les exemples relevés dans cet article concernent principalement la consommation de viandes d'élevage et de produits laitiers.
