[fre] L'élaboration (définition, identification, production) de la qualité des produits agricoles n'est pas dirigée mécaniquement par l'aval. Elle relève de procédures d'acquisition de compétence et d'échange d'informations entre amont et aval. [eng] The elaboration of quality (definition, identification, production) for agricultural products is not mechanically controlled by the demand side, but is related to skill-acquisition processes and information exchanges with offerers.
