Abstract: [eng] The hungarian goose liver industrie reinforces its cohesion to cross through the current period of mutation without weakening. . . The competitivity of the duck and goose production system in Hungary remains important, in spit of the political storn since 1988. The strongest' part of this system still ten industrial slaughter-houses. Export remains essentialy controled by the old monopolistic institution "HUNGAVIS". To avoid any wild growth in production dangerous for the prices, the industry created in 1991 an interprofessional association whose first decision was to place well enforced export quotas.. [fre] La compétitivité de la filière canard et oie demeure importante malgré la tempête politique depuis 1988. Le pouvoir central de cette filière est toujours le fait d'une dizaine d'abattoirs industriels. L'exportation reste essentiellement contrôlée par une ancienne institution monopolistique "HUNGAVIS". Pour éviter toute croissance sauvage de production, dangereuse pour les prix, ces abattoirs ont créé en 1991 une association interprofessionnelle dont la première décision fut de mettre en place un système musclé de quota d'exportation.
