Abstract: [eng] Milk : a "pure, natural produce" ! A case study in Senegal . The ensuing study derives from a collective analysis of dairy industrialisation schemes in Sahelian Africa. It treats of milk production and the part played by local beliefs in the frame of socio-economic changes.
