Abstract: [fre] L'évolution des conditions de vie dont découle la déstructuration des habitudes alimentaires a favorisé l'essor de la restauration hors foyer. Les industriels, conscients des potentialités de ce marché, mettent en œuvre des stratégies d'implantation. [eng] Eating out : origins and relations with the food industry . The disorganization of eating habits which results from the evolution of living conditions has encouraged the rapid growh of eating out. Industrialists, aware of the potentiel of this market are devising development strategies.
