Abstract: [fre] Les exploitations agricoles doivent s'adapter pour tenir compte de la nécessaire protection de l'environnement. A partir d'une situation de protection d'un périmètre d'eau minérale associant une entreprise privée et des agriculteurs, nous proposons une analyse économique d'un processus d'adaptation dans plusieurs exploitations. L'analyse indique une tendance à la spécialisation des systèmes de production et une amélioration des résultats économiques grâce aux moyens de production mis à la disposition des agriculteurs et à l'existence d'une structure d'accompagnement. [eng] Farms and water quality protection : economic analysis of adaptation process . Farms are obliged to carry out adaptation in order to address the vital problem of environmental protection. We propose an economic analysis of an adaptation process by examining several farms having changed their production system, using the example of mineral water protection within a perimeter, associating a private company and a number of farmers. The analysis shows a trend towards specialisation of production systems and an improvement of economic results due to production means made available to farmers and to the existence of a back-up organisation.
