Abstract: [eng] The effects of familiarity on taste preference for milk: an experiment on french and german populations - The authors question the links between culture and preferences for food. Through an experimental blind test on milk with german and french consumers, they show that respondants show significantly a preference for local milks. The authors conclude that practionners should pay attention to local taste variations in their international product policies. The research suggests a validation of nationality as a variable which may enter as a synthetic and explicative factor of sensory preference for food. [fre] Les auteurs s'interrogent sur les liens qui existent entre culture et préférences alimentaires. En réalisant des dégustations à l'aveugle sur du lait, ils montrent que consommateurs allemands et français marquent une préférence nationale nette pour le lait local. Les auteurs concluent à la nécessité de tenir compte des goûts locaux dans la politique internationale des produits. Ils valident la notion de nationalité comme facteur synthétique discriminant de la préférence gustative d'un aliment.
