Abstract: [eng] Organizational changes of the firms of wine and alcoholic beverage industry - This paper rely on previous research issues in which the «organization form» notion was used to bring out firm varieties in wine and alcoholic beverage industry. The object of this paper is to show that a global measure of firms specificity can be achieve from the organizationnal form stability criterion and to test the relationship specificity-integration. [fre] L'article s'appuie sur des travaux qui proposaient la notion de «forme organ isationnel le» pour représenter la diversité des entreprises de l'industrie des vins et spiritueux. L'objet de cet article est de montrer qu'il est possible de proposer une mesure globale de la spécificité des entreprises en utilisant le degré de stabilité de ces formes organisationnelles et de tester la relation spécificité/intégration.
