Gastronomic pathways to progress: Local food consumption and the making of developmental futures

Abstract: Local food transcends mere sustenance, serving as a cultural emblem that shapes tourist experiences, nurtures regional identity, and catalyzes socio-economic development. Chhattisgarh, with its rich culinary traditions, provides a unique perspective on the intersection of gastronomy, tourism behavior, and regional growth. This study examines the role of local food consumption in influencing tourist behavior, shaping behavioral intentions, and fostering socio-cultural and economic vitality. A multi-method approach integrating Structural Equation Modeling (SEM), Fuzzy Set Qualitative Comparative Analysis (fsQCA), and the Stimulus-Organism-Response (S-O-R) Model explores the complex dynamics behind tourist engagement with local food. Data from a survey of domestic and international tourists across Chhattisgarh’s culinary destinations reveal intricate pathways that drive food consumption behaviors. The findings highlight the importance of sensory and emotional stimuli in influencing tourists’ cognitive and emotional responses to local food, with distinct configurations emerging to enhance engagement. This research presents a novel framework by combining SEM, fsQCA, and the S-O-R Model, offering a holistic understanding of the impact of local food tourism on both tourist behavior and regional development. These insights are valuable for policymakers, tourism stakeholders, and entrepreneurs seeking to leverage local culinary heritage for sustainable growth.
