Abstract: The author considers the problems of improvement of food safety management systems' certification. The contemporary food industry is characterized by wide use of raw materials, food adjuncts, packing sheet causing as positive, so negative consequences. Under such circumstances, it would be reasonable to implement the РРССР(Hazard Analysis Critical Control Points).
