Estimating procedure for the macronutrients latent prices in food security models

Abstract: A model that allows the estimation of the latent prices of animal proteins, vegetal proteins, fats and carbohydrates that come from staple food is developed. This research opens a path for developing food security models that take into account not only the calories intake but the nutritional availability and requirements of macro and micro nutrients at a country level. The nutritionist interested in determining the economic feasibility of the diets or the social investigator who may want to address more complex questions has now a powerful tool of analysis.
