Comparative Studies Of Fresh Milk On Offer In The Sales Network Of The Town Of Varna

Abstract: The aim of the current work is to study the quality of fresh milk offered in the sales network of the town of Varna. The object of study are five kinds of fresh cow’s milk by different producers, packed in different kinds of packaging with fat content of 0 .1 to 3.2%. The conducted sensory appraisal on a scale of 100 found that the lowest rating of 71.4 points goes to the fresh milk „Cheh”, while the highest rating goes to the fresh milk „Na baba” – 95.5 points. The obtained results on the values of physical and chemical indicators show that none of the kinds of milk under study fully meets all requirements stipulated by the standard. The lowest deviation is featured by the fresh milk „MUH” with which there has been established inconformity only with respect to fat content, while the highest deviation – by the fresh milk „Cheh”, with which there have been established deviations from the acceptable values for all the tested physical and chemical indicators.
