Chapter 3 in Rethinking Agricultural and Food Policy, 2022, pp 42-61 from Edward Elgar Publishing Abstract: Consumer demand ultimately shapes the goods produced and marketed by the food chain. New technologies in food production offer considerable transformative potential, but caution is needed about technological hype. Consumer reactions are crucial to determine whether a technology is accepted or rejected commercially. Current patterns of food production and consumption provide major challenges for health, particularly in terms of obesity and the way in which it contributes to the incidence of a range of diseases. However, considerations of price and taste often outweigh health in purchasing decisions. Sustainability of production and consumption in terms of environmental and health impacts and well-being was seen as a useful overarching concept. There is a range of opportunities for farmers to undertake their work in a more sustainable way such as regenerative agriculture and carbon farming. The adoption of new technologies may nevertheless be gradual and involve a relatively long transition period.
