Food deserts - food poverty amongst plenty
.
Chapter 11 in Food Security, 2023, pp 117-127 from Edward Elgar Publishing
Abstract:
In the midst of plenty, there are often islands of food insecurity - food deserts. Food deserts are most often found in poor areas of large cities in developed countries. Food outlets such as supermarkets which provide a wide range of food products that can provide a healthy diet are absent (often have vacated) such neighbourhoods leaving only food stores and fast-food outlets that provide only ‘junk food’. This leads to long-term nutrition problems and declining health - indicators of food insecurity. Food deserts are explored and policies to provide heathy food options are outlined.
