Abstract:
Transitioning to sustainable and just food systems will require transformational change that substantially alters the way food is produced, processed, distributed, and consumed. This will require changes across the whole of society and will be underpinned by innovation and sustainable and resilient infrastructure. This chapter explores the consequences of past industrialisation processes and how innovation and infrastructure development encouraged past food system transformations. The authors aim to learn from the negative outcomes of these historical transformations, and consider the potential of responsible innovation to address social and environmental challenges and to encourage a more just transition to better future food systems.
