Abstract:
Abstract Nutrition is paramount to ensure a healthy ageing process. The hospitality industry must support the nutritional needs of all customers by promoting healthy offerings, particularly in restaurant settings. In this work, the authors aim to investigate the existing research in this area as well as the role that AI could play in fostering such change. A systematic literature review, conducted in accordance with the PRISMA methodology, is presented. The results suggest that only a small number of publications are available. The contents of the articles are presented with the scope of reflecting on how technological developments can support the restaurant businesses through the introduction of new technologies and the design of effective marketing campaigns.
