Abstract:
Abstract With the transferring from the state of small scale and decentralization to the state of branding and chaining, Chinese catering industry is more competitive, which intensifies the evolution of industry ecosystem and business development model rapidly. Catering supply chain management services is gradually specialized, and faced with many problems in corporate positioning, business model options and external operations. This paper analyzes the characteristics and evolution path of various types of catering enterprises. The catering industry supply chain ecosystem is designed based on a lot of investigation, which classified related catering enterprises and their relationships. The evaluation models of the catering industry supply chain service providers and customers are established. A case study is presented to illustrate the model application in the design of business model of a supply chain provider.
