Abstract: Abstract This paper addresses a production and procuring problem for fresh ginger rhizomes in a real-world pickled ginger industry. Planting and harvesting schedules affect fresh ginger rhizomes requirements for producing a pickled ginger. The management faces with the unbalance of fresh ginger rhizomes supply due to the lack of a decision support tool. Consequently, the requirements of the plant are not satisfied. A mixed-integer linear programming model has been developed for the problem to minimize the total cost, including cultivating cost, harvesting cost, inbound transportation cost, and purchasing cost. The numerical examples using the data from an industrial case study of pickled ginger plant are presented to illustrate how the proposed model could be applied to actual systems.
