Abstract:
Abstract Understanding how changes in the economic and social environment affect consumer choice is essential to understanding how these choices influence health, environmental, and food security outcomes. As consumer plays an increasingly important role in shaping the food and agricultural system, food buying and consuming behavior plays a key role in understanding changes in agricultural trade patterns. This chapter considers contemporary changes occurring in consumer behavior and aims to highlight the link between these new trends and major food trade transformations. The authors characterize principal changes in global trade in food and agricultural products, highlight international factors of food supply, and emphasize the role of transition to Industry 4.0 in establishing sustainable production and supply of food. The chapter addresses changes in the economic, social, and environmental patterns of food trade and food security and studies their impact on consumer behavior. The study is conducted on the case of the European Union, specific aspects of the transformation of food consumption patterns are studied in the case of Romania.
