AbstractIn the last chapter, I addressed the fact that a food chain is a complex organization, and showed how innovation is important in keeping a food chain competitive, by discussing the agenda for farmers and input supply companies at the beginning of a chain. Now I will move forward in the chain and discuss the innovation agenda for the food industry and for retailers, in order to attend to demanding consumers. Since the food industry is in close contact with consumers' needs and desires, which have been changing at an ever-faster pace, that is where most innovations are taking place…
