Abstract:
Breakthrough environmentally friendly technologies include the production and use of plant biocorrectors for developing specialized products and employing liquefied gases as extraction agents. The unique properties of liquid and supercritical CO2 make it possible to obtain food additives and biologically active substances with high antioxidant and geroprotective properties. This research aims to create multi-component food products enriched with food biocorrectors that have immunoprotective qualities. To achieve this, the authors set several tasks to select raw materials and enrichers for meat and fish‒plant products. The research methodology is based on traditional methods of analyzing the composition of raw materials and finished products, as well as new gas‒liquid processing techniques for raw materials. As a result of the research, the authors selected Russian spice-aromatic raw materials containing beneficial biologically active substances, studied the properties of liquefied gases suitable for extracting biologically active substances (BAS) from plant raw materials, adapted the automated installation for BAS extraction with liquefied carbon dioxide (developed at Kuban State Technological University), developed CO2 extraction regimes, examined the qualitative composition of extracts from domestic spice-aromatic plants, and formulated products enriched with CO2 extracts and cryopowders. Combined meat and fish‒plant products enriched with CO2 extracts from domestic spices and cryopowders have been created for the first time in technological practice. The ratios of proteins, fats, and carbohydrates meet the dietary requirements of individuals leading a sedentary lifestyle.
