Abstract:
La mise en place d’un projet de développement local, par la construction d’une Indication Géographique, est analysée à partir des apports de l’Economie des Conventions. La conformation d’un comité de promotion d’une Denominación de Origen pour Chivito Criollo del Norte Neuquino est considérée comme l´émergence d’une convention de coopération servant à formaliser et légaliser les conventions d’effort et de qualification préexistantes dans le territoire.
