Abstract: The report examines India's export potential in pickles and sauces, highlighting the gap between a strong domestic base and a modest share of global trade. Exports are constrained by fragmented value chains, low processing intensity, inconsistent raw-material quality, food-safety/labelling compliance gaps, and weak brand visibility beyond diaspora markets. Drawing on stakeholder consultations, it proposes strategies around contract farming, processable crop varieties, food-safety certification, product adaptation, SME capacity building, logistics upgrades, and FTA use, under the APEDA–ICRIER Knowledge Partnership.
