La yuca en el Caribe colombiano: De cultivo ancestral a agroindustrial

Abstract: Yucca is one of the vegetables with the highest energy source in the world for both human and animal consumption. Its farming is adaptable to different geographical conditions, so it may be an important reserve crop in case of poor harvests of other food products. The Colombian Caribbean region has the highest production of yucca in the country, and during the last decade has increased its planted area. However, the production of this crop has underperformed relative to the national average, since planting is dominated by traditional systems, without the proper use of technology in the preparation and fertilization of soil and deficient seed quality. In the last three decades agro-industrial projects have been developed with the support of the national government, international agencies, and research and development centers with the aim of overcoming poverty in areas with yucca cultivation. Despite their importance, some of these projects have not worked because of the lack of planning or the scarcity of raw materials. RESUMEN: La yuca es uno de alimentos vegetales de mayor fuente de energía en el mundo, tanto para consumo humano como animal. Su cultivo se adapta a diferentes condiciones geográficas, por lo que puede ser una importante reserva cuando hay malas cosechas de otros productos alimentarios. La región Caribe colombiana es la de mayor producción en el país y en la última década incrementó las áreas sembradas. No obstante, en esta región la producción de este cultivo tiene un rendimiento inferior al del promedio nacional, pues predominan las siembras con sistemas tradicionales, sin el uso adecuado de tecnologías en la preparación y fertilización del suelo y semillas de calidad. En las tres últimas décadas se desarrollaron proyectos agroindustriales apoyados por el gobierno nacional, organismos internacionales y centros de investigación y desarrollo, con el propósito de superar la pobreza rural en las zonas productoras. Pese a su importancia, algunos de estos proyectos no funcionaron por falta de planeación o escasez de la materia prima.
