Abstract:
When it comes to food, nostalgia knows a surprising sustainability. Whether it's about practices, table's behaviour or quality of food available, a lot of autors claims that " it was better before ". However, in a context in which eater's alimentation is more and more marqued by reflexivity (Giddens 1994), this nostalgia appears paradoxically today more as a lever of changes and innovations than the simple symptom of a passive traditionalism. By relying on recent enquiry's results, we'll show how, through individual's initiatives it contributes today to imagine a new food modernity.
