Abstract: Our communication aims to present the key concepts and methodological tools mobilized by the analysis of global value chains. First, we present the evolution of CVG analysis positioning based on a historical development of this approach. Thus, Particular emphasis will be done on the definition of key concepts: dominant players, upgrading, governance modes, etc. (Gereffi and et al., 2005). Then, using Palpacuer and Balas (2010) and Trienekens (2011) frameworks, we introduce some methodological tools associated with this type of analysis. This will allow us to identify the specific characteristics of the larger models of GTC as the determinants of governance modes and profiles of key players. Finally, we illustrate our analysis with examples of fresh tomatoes CGV in several Mediterranean countries (Champion, 2014; Tozanli, El Haddad, 2007) and poultry sector in Algeria (Kaci, Cheriet, 2013). These comparisons of the GCS in these countries allow a better coordination of inter-firm relationships based view analysis (Gereffi and et al., 2005). They also allow us to identify the potential of these explanatory analysis tools and draw some application perspectives for the analysis on the food field in developing countries (Temple and et al., 2009, Temple and et al., 2011 and 2011; Rastoin, Ghersi, 2010).
